Lentil and Spinach Soup
Ingredients
• 2 onions, peeled and sliced
• 1 clove garlic, peeled and crushed
• 1 carrot, peeled and chopped
• 450g fresh spinach, well washed and trimmed
• 120g red lentils
• 1 tbsp vegetable oil
• 1 litre vegetable stock
• Salt and pepper
Method
1. Heat the oil and cook the onions, garlic and carrot for 5 minutes.
2. Add the lentils and spinach and cook for another 2-3 minutes.
3. Add the stock and bring to the boil.
4. Simmer for 10-15 minutes until the vegetables and lentils are tender.
5. Season as necessary and liquidise with a soup blender.
